Oven-Baked Butternut Squash & Goats' Cheese Gnocchi

One dish is all it takes to whip up this cheesy winner. You'll roast gnocchi, butternut squash and red onion till crispy before stirring through creamy goats' cheese, soft cheese and pine nuts. Top it off with crispy sage leaves to finish.

Before you begin...

This recipe takes around 5-10 min to prep, so get your oven-proof dish and all your ingredients ready, then wash your fruit and veg

Now, let's get started!

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Strip your sage leaves from their stems and coat them with a drizzle of olive oil then add the oiled sage leaves to a plate and put in the microwave for 2 min or until crisp, then set aside on kitchen paper – this is your crispy sage

Tip: Check every 30 secs to prevent it from burning, as microwave temperatures vary!

Peel and chop your red onion[s] into wedges

Add a generous drizzle of olive oil to a large oven-proof dish (or two!), add your gnocchi to one side of the dish[es] and give it a good mix up until its well coated then add your butternut squash cubes and onion wedges to the other side of the dish[es]

Put the dish[es] in the oven for an initial 30 min or until the gnocchi is crispy and golden

Tip: Check your gnocchi after 25 min and give it a stir for even crispiness!

Use this time to clear up, set the table, have a cup of tea or simply chill!

After 30 min, remove the dish[es] from the oven and top with your goats' cheese and your pine nuts

Return the dish[es] to the oven for 3-4 min further or until the pine nuts have toasted

Once toasted, stir through your soft cheese, roasted garlic paste and vegetable stock mix with a splash of cold water

Give it a good mix up until everything is fully coated – this is your oven-baked butternut squash & goats' cheese gnocchi

Garnish with the crispy sage and a good grind of black pepper
