You'll also need

Olive oil, Pepper, Salt, Vegetable oil, Water (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potato[es] (skins on) into thin chips

Add the chips to a baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt

Give everything a good mix up and put the tray[s] in the oven for an initial 12-15 min or until starting to soften

Meanwhile, combine your mayo and truffle oil in a bowl with a splash of water and stir it all together

Add 1/4 of your cider vinegar (save the rest for later!) with a pinch of salt and pepper – this is your truffle mayo

Chop your tomato[es] roughly

Wash your salad, then pat dry with kitchen paper

Once the chips have had an initial 12 min, remove the tray[s] from the oven

Add your meat-free patty[ies] to piece of tin foil on the tray[s] and pull up the edges of the foil to form an open parcel

Return the tray[s] to the oven and cook for 10-12 min further or until cooked through

Tip: Cooking for 3 or more? Use 2 trays!

Slice your brioche bun[s] in half (if required!)

Once everything is nearly ready, remove the tray[s] from the oven and add the brioche halves

Return the tray[s] to the oven for 1-2 min or until warmed through

To build your burger, put a handful of salad on the brioche bun base, top with a meat-free patty and spread over a generous dollop of the truffle mayo and onion marmalade, then top with the brioche lid

Serve the remaining salad and chopped tomato to the side and dress with the remaining cider vinegar, a drizzle of olive oil and a pinch of salt, serve the chips to the side
