One Tray Plant-Based Burger With Chips & Vegan 'Nduja Mayo
One tray is all you need for this easy plant-based burger. You'll bake chips, onion and meat-free patties in the oven before loading the lot into buttery brioche buns with fiery 'nduja mayo. Banging.

Before you begin...
This recipe takes around 5-10 min to prep, so get your ingredients ready, then wash your fruit and veg

Now, let's get started!
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Cut your potatoes (skins on) into chips
Peel and chop your brown onion[s] into thick discs (roughly 1cm thick)

Add the chips to a one side of a non-stick baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper
Add the onion discs to the other side of the tray[s] with a drizzle of vegetable oil
Put the tray[s] in the oven for for an initial 15 min or until starting to crisp

Meanwhile, chop your tomato[es] into wedges
Combine your mayo and plant based 'Nduja (can't handle the heat? Go easy!) with a splash of cold water – this is your vegan 'Nduja mayo

Wash your salad, then pat dry with kitchen paper

Once the chips have had 15 min, remove the tray[s] from the oven and add your meat-free patty[ies]
Put the tray[s] in the oven for a further 10-12 min or until cooked through
Tip: Cooking for 4? Use 2 trays!

Once the meat-free patty[ies] are almost done, remove the tray[s] from the oven
Cut your brioche bun[s] in half
Add the brioche halves, cut side up, and return the tray[s] to the oven for 2-3 min or until warmed through
Tip: You can pop them on top of the chips to save on washing up!

To build your burger, top the toasted brioche base with some of the salad, a meat-free patty, the vegan 'Nduja mayo and the cooked onion discs
Serve the chips to the side with the remaining salad and the tomato wedges
Drizzle the salad & tomato wedges with your white wine vinegar and some olive oil
Dig in!
