One Tray Meat-Free Sausage Bake With Mustard Mayo
Save on washing up with this meat-free sausage tray bake. You'll roast sweet potato, onion and courgette with sausages then drizzle with a sweet mustard mayo and serve.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Chop your sweet potato[es] (skins on) into wedges

Cut your red onion[s] into wedges, leaving the skins on (this helps them cook quicker)

Top, tail and slice your courgette[s] into rounds

Add the chopped vegetables to a baking tray
Tip: Cooking for 3 or more? Use two trays!
Drizzle with 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil and season with a pinch of salt and give everything a good mix up
Put the tray[s] in the oven for an initial 10-15 min or until everything is starting to soften

Once everything is starting to soften, remove the tray[s] from the oven and add your meat-free sausages on top of the vegetables

Return the tray[s] to the oven and cook for a further 25-30 min or until everything is cooked through and golden – this is your one tray meat-free sausage bake
Tip: Carefully cut off the root and remove the skin from the onion once everything's cooked

Whilst everything is cooking, combine your mayo with your mustard ketchup and 1 tbsp [1 1/2 tbsp] [2 tbsp] cold water in a small bowl – this is your sweet mustard mayo

Serve the one tray meat-free sausage bake drizzled with the sweet mustard mayo
