One Pot Spicy Gumbo-Inspired Sausage Stew With Rice
New Orleans-style gumbo is an American favourite for a reason. You'll sizzle sausage, pepper and onion with southern fried seasoning before adding stock and simmering till rich. Serve up with rice and dig in.

Vegetable oil, Flour (or dietary alternatives)
Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Heat a pot (with a matching lid) over a medium-high heat with a drizzle of vegetable oil
Once hot, add 1 tbsp [1 1/2 tbsp] [2 tbsp] flour
Cook for 5-6 min or until the flour mixture has browned

Meanwhile, peel and finely slice your brown onion[s]
Deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and dice
Peel and finely chop (or grate) your garlic

Once the flour mixture has browned, add your sausage meat (remove the paper if required!) to the pot
Cook for 3-4 min or until beginning to brown, breaking it up with a wooden spoon as you go

Boil a kettle
Once the sausage meat has begun to brown, add the sliced onion and diced pepper
Cook for 4-5 min or until beginning to soften

Once slightly softened, add your southern fried seasoning, tomato paste and chopped garlic
Cook for 30 secs or until fragrant

Once fragrant, add your beef stock mix with 200ml [250ml] [350ml] boiled water and bring to the boil over a high heat
Once boiling, reduce the heat to medium-high and cook, for 10-12 min or until the veg is tender and the sausage meat is cooked through (no pink meat!) – this is your one pot spicy gumbo inspired sausage stew

Squeeze your pouch[es] of cooked white long grain rice to separate the grains
Tear the top corner of the pouch[es] (just a little!) and microwave for 2 min or until piping hot
Tip: If you're cooking two or more pouches, pop them in together but increase the microwave cook time accordingly

Serve the one pot spicy gumbo-inspired sausage stew and chop your parsley roughly over with scissors
Serve the cooked rice to the side
