One Pot Spiced Lean Beef With Couscous

For this wholesome one pot, you'll cook lean beef mince, red onion and butter beans in flavours inspired by a spiced North African sausage called 'merguez'. Serve with couscous and top with yoghurt and flaked almonds for crunch. Under 600 calories.

You'll also need

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Boil a kettle, then heat a large, wide-based dry pan (preferably non-stick) over a medium heat

Once hot, add your flaked almonds and cook for 2-3 min or until toasted and lightly golden

Tip: Watch them like a hawk to make sure they don't burn!

Transfer the toasted almonds to a plate, reserve the pan

Peel and finely slice your red onion[s]

Chop your tomato[es] roughly

Drain and rinse your butter beans

Return the reserved pan to a high heat with a drizzle of olive oil

Once hot, add your lean beef mince with a pinch of salt and cook for 3-4 min or until beginning to brown, breaking it up with a wooden spoon as you go

Once browned, add the sliced onion and chopped tomato and cook for 2-3 min or until starting to soften

Dissolve your stock mix in 200ml [260ml] [340ml] boiled water

Once softened, add your ras el hanout and tomato paste and cook for 1 min or until fragrant

Once fragrant, add the drained butter beans and beef stock

Cook for a further 3-4 min or until cooked through (no pink meat!) and the sauce has slightly thickened – this is your one pot spiced lean beef

Meanwhile, add your couscous to a heatproof bowl with a pinch of salt and 200ml [300ml] [400ml] boiled water

Cover with a tea towel and set aside until all of the liquid has been absorbed

Fluff with a fork before serving

Serve the one pot spiced lean beef with the cooked couscous to the side

Top with a dollop of your natural yoghurt and garnish with the toasted almonds
