One Pot Peri Peri Chicken & Rice With Buttered Corn

Tuck into peri peri perfection with this one pot twist on a fakeaway classic. You'll spike your chicken, rice and peppers with a hit of peri peri then serve with buttered corn and cooling yoghurt.

You'll also need

Vegetable oil, Pepper, Salt, Butter, Water (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Before you start cooking, take your chicken out of the fridge, open the packet and let it air

Deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and chop into chunks

Heat a pot (with a matching lid) over a high heat with a drizzle of vegetable oil

Once hot, add your chicken breast strips and chopped pepper with your peri peri spice mix and a knob of butter and cook for 1 min or until the butter has melted

Peel and finely chop (or grate) your garlic

Once melted, add your tomato paste and chopped garlic and cook for 1-2 min or until fragrant

Once fragrant, add your white long grain rice with 350ml [530ml] [700ml] cold water, your chicken stock mix and a generous pinch of salt and pepper

Give it a good mix up and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 12-15 min or until the rice and chicken is cooked through (no pink meat!)

Tip: Stir halfway through, to stop it sticking!

Once cooked, put the lid back on and set aside, for 4-5 min – this is your one pot peri peri chicken & rice

Once the rice is ready, drain your sweetcorn

Add the drained sweetcorn to a bowl with a knob of butter and a pinch of salt and pepper

Put the bowl in the microwave for 1-2 min or until the butter has melted and the corn is warmed through – this is your buttered corn

Top the one pot peri peri chicken & rice with the buttered corn and drizzle over your natural yoghurt

Season with a grind of pepper
