One Pot Pasta
The idea behind this dish is that you cook your linguine in a measured amount of stock, rather than a massive pan of water. Throw in your raw ingredients; garlic, cherry tomatoes, Italian hard cheese and herbs, to cook as one. They marry together to form perfectly cooked pasta and a silky smooth sauce.

Olive oil, Pepper, Salt, Sugar (or dietary alternatives)
Cooking instructions
Instructions for 2 portion recipe.
Boil a full kettle
Add the stock cube[s] and 700ml [1.4L] boiled water to a large pot (big enough to fit all the ingredients)
Place the pot over a high heat and bring to the boil

Meanwhile, peel and finely slice the onion[s]
Peel and finely slice the garlic
Chop the cherry tomatoes in half
Grate the cheese

Once the stock is boiling, reduce the heat to medium and add the linguine (you can break the linguine in half if it doesn't fit)
Add the tomatoes, onion, garlic, dried oregano and the chilli flakes (can't handle the heat? Go easy!)
Add half the cheese and half the basil

Add 2 tbsp [4 tbsp] olive oil and 1 tsp [2 tsp] of both sugar and pepper
Cover and cook for 5 min or until half of the water has absorbed

After 5 min, remove the lid and stir continuously until the linguine has cooked (approx. 5 min), adding more water if needed
Tip: stirring the sauce releases the starch from the pasta, making it creamier

Once cooked, add the remaining cheese and basil

Taste for seasoning, adding more salt and pepper if needed

Serve and enjoy!
