One Pot Lebanese-Style Spiced Lamb & Rice

You can whip up this Lebanese classic using just one pot. You'll brown lamb mince with coriander and paprika before adding rice and simmering the lot in a rich stock. Stir through spinach and serve on a bed of creamy yoghurt to finish.

You'll also need

Olive oil, Salt, Pepper, Water (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Heat a pot (with a matching lid) over a high heat with a drizzle of olive oil

Once hot, add your lamb mince and a generous pinch of salt and pepper

Cook for 4-5 min or until beginning to brown, breaking it up with a wooden spoon as you go

Peel and finely dice your red onion[s]

Once browned, add the diced onion with your ground coriander and ground paprika and cook for 2 min or until fragrant

Once fragrant, add your white long grain rice and beef stock mix with 350ml [530ml] [700ml] cold water and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 12-15 min or until all the water has absorbed and the rice and lamb mince is cooked through (no pink meat!)

Wash your spinach and pat it dry with kitchen paper

Once your rice has cooked, remove from the heat and add your spinach

Put the lid back on and set aside for 4-6 min or until the spinach has started to wilt

Give everything a good mix up – this is your one pot Lebanese-style spiced lamb & rice

Strip your mint from their stems and chop them roughly, discard the stems

Tip: Hold the top of the herb sprigs firmly and slide your fingers down their lengths to easily remove the leaves

Serve the one pot Lebanese-style spiced lamb & rice and drizzle over your natural yoghurt

Garnish with the chopped mint and a good grind of black pepper
