One Pot Lean Beef Lasagne Soup
Running out of soup ideas? Try this lasagne-style winner. You'll whip up an extra saucy lasagne before topping it with creamy soft cheese and grated Italian cheese. Delizioso.

Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Boil a kettle
Heat a pot with a drizzle of olive oil over a high heat
Once hot, add your lean beef mince and a pinch of salt and pepper
Cook for 4-5 min or until beginning to brown, breaking it up with a wooden spoon as you go

Meanwhile, peel and finely dice your brown onion[s]
Top, tail, peel and dice your carrot[s] finely
Peel and finely chop (or grate) your garlic

Break your lasagne sheets into medium-sized pieces

Once the beef has browned, add the diced onion and diced carrot with a pinch of salt and sugar
Cook for 4-5 min or until softened and the beef is cooked through (no pink meat!)

Once softened, add your dried oregano and the chopped garlic and cook for 30 secs or until fragrant
Once fragrant, add your chopped tomatoes, beef stock mix and soy sauce with 400ml [520ml] [680ml] boiled water

Bring the pot to a boil then add the broken lasagne sheets to the pot one at a time (this prevents them from sticking together!)
Cook for 6-7 min or until the pasta is cooked, stirring from time to time to prevent the pasta from sticking – this is your one pot lean beef lasagne soup

Meanwhile, combine your soft cheese with half of your grated Italian hard cheese (save some for garnish!) and season with a pinch of pepper and a splash of milk – this is your cheesy cream mixture
Chop your parsley finely, including the stalks

Top the one pot lean beef lasagne soup with the cheesy cream mixture
Garnish with the chopped parsley, the remaining grated Italian hard cheese and a good grind of black pepper
