One Pot Cheesy Chicken Breast & Tomato Gnocchi Bake
For this one-dish meal, you'll bake gnocchi in a spinach and tomato sauce, and top it with chicken breast and grated cheddar cheese. Once it's done, watch out. There'll definitely be a contest for the crispy edges. Under 600 calories.

Before you start cooking, take your chicken out of the fridge, open the packet and let it air
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Boil half a kettle
Peel and finely chop (or grate) your garlic

Chop your cherry tomatoes in half
Grate your cheddar cheese

Add your diced chicken breast to a bowl with a drizzle of vegetable oil and a generous pinch of salt and pepper and give everything a good mix up – this is your seasoned chicken

Combine your tomato paste, chicken stock mix, chopped garlic and a pinch of sugar with 150ml [200ml] [250ml] boiled water in an oven-proof dish

Wash and add your spinach, halved cherry tomatoes and half your gnocchi to the dish and give everything a good mix up
Top with the remaining gnocchi

Add the seasoned chicken and grated cheddar and season with a generous grind of black pepper

Put the dish in the oven and cook for 25-30 min or until golden and crisp and the chicken is cooked through (no pink meat!) – this is your one pot cheesy chicken breast & tomato gnocchi bake

Leave the one pot cheesy chicken breast & tomato gnocchi bake to stand for 5 min before serving (this helps the flavours to develop and makes it easier to serve!)
