One Pot Bacon Pasta

The secret to this dish is cooking your linguine in the same pan as you've fried your bacon, before adding in a measured amount of stock. You then throw in your raw ingredients: garlic, cherry tomatoes, cheese and herbs, to cook as one; marrying together to form perfectly cooked pasta and a silky smooth sauce.

Ingredients for 2 people

40g Irish mature cheddar
40g Irish mature cheddar
125g cherry tomatoes
125g cherry tomatoes
1 tbsp Italian dried oregano
1 tbsp Italian dried oregano
200g linguine
200g linguine
1 chicken stock cube
1 chicken stock cube
135g British dry cured smoked streaky bacon
135g British dry cured smoked streaky bacon
1/2 tsp fiery chilli flakes
1/2 tsp fiery chilli flakes
10g fresh basil
10g fresh basil
2 garlic cloves

1 onion

You'll also need

Olive oil, Pepper, Sugar (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Boil a kettle

Chop the bacon finely 

Heat a large, dry pan with a lid over a medium heat 

Once hot, add the bacon and cook for 3-5 min until crispy

Add 700ml [1.4L] boiled water to the bacon and crumble in the stock cube[s]

Whisk to dissolve the stock cube[s] and bring to the boil

Meanwhile, chop the cherry tomatoes in half

Grate the cheddar

Peel and finely slice the garlic

Peel and slice the onion[s] finely

Once the stock is boiling, reduce the heat to medium and add the linguine (break the linguine in half if it doesn't fit)

Add the tomatoes, onion, garlic, dried oregano, chilli flakes (can't handle the heat? Go easy!) and half the grated cheddar to the pan

Add 2 tbsp [4 tbsp] olive oil, 1 tsp [2 tsp] sugar and 1 tsp [2 tsp] pepper to the pot

Cover with a lid and cook for 5 min

After 5 min, remove the lid, and stir continuously until the pasta is cooked and a sauce has formed (add more water if it looks too dry)

Tip: stirring the sauce releases the starch from the pasta making it naturally creamier

Meanwhile, chop the basil finely, including the stalks

Once the linguine is cooked, remove from the heat and stir in the basil and remaining cheddar

Serve with a good grind of pepper
