New York Style Ham & Cheese Melt
This New York deli style melt is a mouthwatering favourite in the concrete jungle. It's a toasty, tangy version of a cheese and ham sarnie, with bursts of flavour in every bite. You'll layer up shredded ham hock and melted cheese into ciabatta rolls, and serve with sweet potato chips and pickled cucumber.

Instructions for 2 portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ 425°F/ Gas 6
Peel and cut the sweet potato[es] into chips
Add the sweet potato chips to a baking tray with a drizzle of vegetable oil and a generous pinch of salt and pepper
Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp

Meanwhile, boil a kettle
Slice 4 [8] discs from the cucumber (these will go in your sandwich later!)
Slice the remaining cucumber in half lengthways, then slice the halves into wedges
Chop the dill finely, including the stalks

Combine the white wine vinegar, chopped dill, black mustard seeds, 1 tbsp [2 tbsp] sugar, a splash of boiled water and a pinch of salt in a bowl and stir until dissolved
Add all of the sliced cucumber to the vinegar, give everything a good mix up and set aside – this is your pickled cucumber

Slice the cheddar cheese in quarters lengthways

Slice the ciabatta rolls in half
Spread the ciabatta base with the mustard ketchup
Add the shredded ham hock to the ciabatta base, and top with the cheddar cheese and add to a baking tray with the ciabatta lids (cut side up)
Put the tray in the oven for 3-4 mins or until the cheese has melted

Once the cheese has melted, remove the tray from the oven and spread mayonnaise over the ciabatta lids

Layer the pickled cucumber discs on top of the melted cheese and top with the ciabatta lid – this is your New York melt

Serve the New York melt with the sweet potato chips and remaining pickled cucumber wedges to the side
