Cooking instructions
Instructions for 2 [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Chop the sweet potatoes into wedges
Add the sweet potato wedges to a tray with a drizzle of vegetable oil and a pinch of salt and give it a good mix up
Put the tray in the oven for an initial 12-15 min or until starting to soften

While the wedges are cooking, peel and slice a few rounds off the red onion[s]
Grate the remaining red onion
Peel and grate (or finely chop) the garlic

Add the turkey mince, panko breadcrumbs, grated onion, dried oregano and half the grated garlic (you'll use the rest later!) to a large bowl with a generous pinch of salt and pepper
Mix thoroughly until fully combined (clean hands are the best way!) – this is your herby turkey mixture

Shape the herby turkey mixture into 2 [4] burger patties – these are your turkey burgers

Once the wedges have started to soften, add the turkey burgers to the tray
Tip: Cooking for 4? Use a separate tray!
Put the tray[s] in the oven for a further 12-14 min or until everything is cooked through (no pink meat!)

Meanwhile, combine the mayo with the remaining grated garlic (don't like raw garlic? Go easy!) and the white wine vinegar in a small bowl
Add a pinch of salt and give it a good mix up – this is your aioli

Wash the gem lettuce, then pat it dry with kitchen paper and shred

Serve the turkey burger topped with a dollop of aioli and the onion rounds with the sweet potato wedges and shredded lettuce to the side
Drizzle the remaining aioli over the shredded lettuce
Enjoy!
