Melty Mozzarella Pizza With Roasted Veg
These summery pizza is the ideal option for al fresco dining. Top fluffy pizza with a flavour-packed mix of Mediterranean veg, melty mozzarella and punchy grated Italian hard cheese and bake till beautifully golden. Serve with a simple seasonal salad on the side.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Slice your white cup mushrooms
Top, tail and slice your courgette[s]
Cut your cherry tomatoes in half
Peel and finely chop (or grate) your garlic
Put a large baking tray (or two!) in the oven to heat up (this will stop your pizza bottom from going soggy!)

Remove the heated tray[s] from the oven and add your pizza base[s] to a baking tray
Put the tray in the oven and cook for 5 min

Meanwhile, combine the chopped garlic, sliced courgettes, mushrooms, chopped cherry tomatoes and your dried oregano in a large bowl with a large pinch of salt and a drizzle of olive oil
Give everything a good mix up – this is your vegetable topping
Add the vegetable topping to a baking tray and put the tray in the oven for 10 min or until the vegetables are starting to soften and brown

Meanwhile, tear the mozzarella into rough bite-sized pieces
Cut the black olives in half

Remove the browned vegetables from the oven
Spread the topping over the pizza base[s]

Sprinkle the shredded mozzarella over the vegetables
Add the grated Italian hard cheese
Top with the olives
Return the topped pizza base[s] to the oven for 13-15 min or until the cheese has melted and started to brown – this is your roasted vegetable pizza

Meanwhile, add your salad to a bowl
Add a drizzle of olive oil and season to taste, then give everything a good mix up

Serve the roasted vegetable pizza with the salad on the side
