Melty Blue Cheese Pork Steak With Pears
Sweet seasonal English pear and salty, crumbly Danish Blue cheese isn't a flavour combination exclusive to the cheeseboard. Pork steaks can handle big, melted blue cheese flavours too: think of the cheese as both a seasoning and a sauce. A seriously simple, tasty midweek traybake!

Instructions for 2 portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Cut the potatoes into wedges (skins on)
Add them to a baking tray, drizzle with vegetable oil and season generously with salt
Put the tray in the oven until step 4

Meanwhile, cut the pear(s) into quarters, cutting off the core(s)
Peel the onion(s) and chop into wedges

Crumble the cheese (remember couples use 50g)

Add the onion to the potato tray with an extra drizzle of oil
Place the tray back in the oven until the end of the next step

Meanwhile, melt 15g (30g) butter and a big pinch of sugar in a pan (preferably non-stick) over a high heat
Once foaming, arrange the pears in a single layer and cook for 2-4 min per side, or until browned and carmelised
Transfer the pears onto the baking tray, return to the oven and reserve the pan for the next step

Wipe the pan clean and return it to a medium-high heat
Once hot, sear the fatty edges of the steaks (using tongs to keep them in place) for 2 min before cooking them for 1 min each side

Place the steaks on top of the onions and cover with cheese and oregano
Pour any meat juices in the pan over the tray
Return to the oven and cook for 5-10 min or until the pork steaks are cooked through

Serve the pork steaks and potatoes with the trimmings
