Meat-Free Sausage Roll With Fragrant Apple Sauce
Feeling festive? Time for a cheeky meat-free sausage roll. Pair it with roasted root veg and homemade fragrant apple sauce for a classic that packs a punch.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 6
Chop your potato[es] (skin on) into bite-sized pieces
Top, tail and chop your carrot[s] and parsnip[s] (skins on) into bite-sized pieces

Add the chopped potato, carrot and parsnip to a baking tray with a drizzle of vegetable oil and a pinch of salt and give everything a good mix up
Put the tray in the oven for 30 min or until golden and crispy – this is your roasted root veg

Whilst the veg is cooking, peel and finely dice your red onion[s]
Finely dice your apple[s] (skin on) and discard the core[s]
Heat a pot over a medium heat with a drizzle of vegetable oil
Once hot, add the diced onion and apple with a pinch of salt and cook for 4-5 min or until starting to soften

Meanwhile, add your meat-free burger patty[ies], dried sage, and panko breadcrumbs to a bowl
Season with a pinch of salt and pepper and give everything a good mix up – this is your meat-free sausage roll mix

Line a baking tray (or two!) with non-stick baking paper
Dust your work surface with a generous sprinkling of flour, then unwrap your puff pastry and roll it out to approx. 0.5cm thickness with a rolling pin
Place the pastry on the tray[s], then add the meat-free sausage roll mix and lay it down the centre of the pastry in a sausage shape
Tip: You may need to make multiple if cooking for more than 2!

Roll the pastry tightly over the mix and continue to roll until the meat-free sausage roll mix is encased by pastry, then place it seal-side down and carefully score the top with a sharp knife
Season along the top with a pinch of salt and sprinkle over your black sesame seeds
Put the tray[s] in the oven for 20 min or until golden and crispy – this is your meat-free sausage roll

Once the onion and apple have started to soften, add your bay leaf[ves], cider vinegar, 1 tbsp [1 1/2 tbsp] [2 tbsp] sugar and 50ml [75ml] [100ml] cold water to the pot
Cook for 8-10 min further or until the apple has started to break down
Once done, set aside to cool slightly before serving – this is your fragrant apple sauce
Remove the bay leaf[ves] and discard

Slice the meat-free sausage roll in half and serve with the roasted root veg and fragrant apple sauce on the side
