Meat-Free Mince Wraps With Lime Mayo
For this plant-based supper, we're throwing Mexican inspiration in the mix with spiced Meatless Farm mince, lime mayonnaise and lettuce. For extra zing, garnish with pickled onion and coriander.

Instructions for 2 [for 3] [for 4] portion recipe.
Peel your red onion[s] and slice a few rings off, as finely as you can
Finely chop the remaining onion

Heat a large, wide-based pan (preferably non-stick) with 1 tbsp [1 1/2 tbsp] [2 tbsp] vegetable oil over a medium-high heat
Once hot, add the chopped onion and cook for 2-3 min or until starting to soften

Once starting to soften, add your meat-free mince and cook for 5-6 min or until browned

Whilst the mince is browning, chop your lime[s] in half
Add the onion rings and juice of half the lime to a small bowl with a pinch of salt
Set aside for later – this is your quick-pickled onion
Peel and finely chop (or grate) your garlic

Once the meat-free mince has browned, add your chopped garlic, dried oregano, ground cumin and ground smoked paprika to the pan and cook for 1 min
Add 50ml [75ml] [100ml] water and your soy sauce and cook for 4-5 min or until the mince is cooked and coated in the spices

Combine the juice of the remaining lime with your mayo and a pinch of salt – this is your lime mayo
Wash, then remove 3 outer leaves per person from your lettuce, shred the inner core and pat it dry with kitchen paper
Chop your coriander finely, including the stalks

Add your tortillas to a plate and pop in the microwave for 20 secs on high, or until warmed through

Spread the lime mayo over the warmed tortillas
Top with the lettuce leaves, spiced mince, shredded lettuce and pickled onion
Garnish with the chopped coriander
Enjoy!
