Meat-Free Mince Biryani With Green Beans

We've swapped lamb for delicious Meatless Farm mince for a plant-based take on our popular biryani. You'll simmer it with juicy sultanas, curry spices and rice, and serve with a dollop of natural yoghurt.

You'll also need

Vegetable oil, Salt, Pepper (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 4] portion recipe.

Peel and dice the brown onion[s]

Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger

Peel and finely chop (or grate) the garlic

Heat a large, wide-based pan (preferably non-stick with a matching lid) with 1 tbsp [2 tbsp] vegetable oil over a high heat

Once hot, add the diced onion, chopped ginger, chopped garlic and curry powder with a pinch of salt and pepper

Cook for 4-5 min or until starting to soften

Meanwhile, trim the green beans and cut them in half

Once the onion has started to soften, add the meat-free mince to the pan

Cook for 3-4 min, breaking it up with a wooden spoon as you go

Add the vegetable stock mix and tomato paste

Cook for a further 2 min or until the meat-free mince is starting to brown

Stir in the basmati rice

Add 350ml [700ml] cold water to the pan and bring to the boil over a high heat

Add the halved green beans and sultanas

Once boiling, reduce the heat to low and cook, covered, for 10-12 min or until the water is absorbed and the rice is cooked

Once cooked, taste for seasoning, adding more salt and pepper if needed – this is your meat-free mince biryani

Tip: Add a splash of water if the rice isn't cooked or the mixture is looking a little dry

Serve the meat-free mince biryani with a dollop of natural yoghurt on top
