Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7, then boil a little water in a kettle
Add 100ml [150ml] [200ml] milk to a large bowl and microwave for 15 secs or until slightly warm, then add your dried yeast to the bowl and 1 tsp [1 1/2 tsp] [2 tsp] sugar
Mix it all together and set aside for 5-10 min for the yeast to develop

Put a large baking tray (or two) in the oven to heat up (this will stop the pizza bottom[s] from going soggy!)
Meanwhile, cut your potatoes (skins on) into chips
Add the chips to one side of a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper and give everything a good mix up
Add your hot dog sausage[s] to the other side of the tray[s] and put the tray[s] in the oven for an initial 15 min

Peel and finely chop your shallot[s]
Dice your cucumber finely
Add the chopped shallot and diced cucumber to a bowl with your white wine vinegar and 1 tbsp [1 1/2 tbsp] [2 tbsp] boiled water
Season with a pinch of salt and sugar, mix it all together and set aside to pickle until serving – these are your pickles

Add your pizza base mix to the bowl with the yeast
Gradually add up to 75ml [100ml] [130ml] milk (you may not need all of it!), a little at a time, and gently mix with a plastic spatula until a sticky dough ball has formed
Tip the dough out onto a floured work surface and cut into 1 ball per person
Toss each dough ball in a light dusting of flour until coated, rounding the ball as you go (no need to knead!)

Press each dough ball in the centre and gently push outwards with your fingertips into a oval shape (don't worry if the dough rips, just stick it back together and carry on!)
Tip: Dust with extra sprinkles of flour as you go to stop it sticking!
Keep going until your base is the size and shape of a regular pitta bread – this is your pizza base[s]

Remove the heated tray[s] from the oven and slide the pizza base[s] onto the tray[s]
Remove the tray with the chips and sausage[s] from the oven, remove the sausage[s] from the tray and place onto each pizza base
Put the tray[s] with the pizza base[s] in the oven for 10 min or until the pizza base[s] have browned and the sausage[s] are cooked through (no pink meat!) – this is your pizza hot dog[s]

Return the tray with the chips to the oven for a further 10 min or until golden and crisp
Once cooked, top your pizza hot dog[s] with a spoonful of pickles (you'll use the rest later!) and drizzle with your mustard ketchup and tomato ketchup – this is your loaded pizza hot dog

Serve the loaded pizza hot dog with the chips and remaining pickles to the side
Enjoy!
