Loaded Falafel Pitas With Yoghurt Tahini Sauce & Tomato Couscous
Toaster, microwave or kettle-friendly – this is dinner without the cooking. You'll stuff pitta with falafel and a tahini and sumac-laced yoghurt sauce. Serve with tomato couscous and lettuce for extra crunch.

You can only heat your food once, then enjoy straight away
Note: Microwave ovens vary. Make sure you heat food thoroughly (even if it takes you a little longer than 10 min)
Now, let's get started!
Boil half a kettle
Combine your vegetable stock mix and tomato paste in a heatproof bowl with 200ml [300ml] [400ml] boiled water and stir it all together
Add your couscous to the bowl, cover and set aside until all of the liquid has been absorbed – this is your tomatoey couscous
Fluff with a fork before serving
Slice your tomato[es] into rounds
Wash your lettuce, then pat it dry with kitchen paper and shred finely
Chop your parsley finely, including the stalks
Add your tahini and natural yoghurt to a small bowl with your roasted garlic paste and sumac
Season with a pinch of salt and 1/2 tsp [3/4 tsp] [1 tsp] sugar and stir it all together – this is your tahini yoghurt sauce
Add your sourdough pitta[s] to a toaster for 1-2 min or until warmed through
Add your falafels to a plate and pop in the microwave for 1 min or until warmed through
Slice open the top of the warmed pitta and fill it with the warmed falafels, tomato slices and most of the tahini yoghurt sauce, then sprinkle with half the chopped parsley
Serve the tomatoey couscous and shredded lettuce to the side and season with a pinch of salt and a drizzle of olive oil
Drizzle the remaining tahini yoghurt sauce over the couscous and lettuce, then garnish with the remaining chopped parsley
