You'll also need

Butter, Pepper, Sugar, Salt, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Peel and finely slice half your red onion[s], then finely dice the remaining

Wash your salad, then pat dry with kitchen paper

Add the diced onion to a bowl with your rice vinegar and 1 tsp [1 1/2 tsp] [2 tsp] sugar and set aside to pickle – this is your quick-pickled onion

Add your mince, tomato paste and lemongrass & lime leaf paste to a bowl

Give everything a good mix up until thoroughly combined (clean hands are the best way!)

Shape into 1 patty per person

Heat a large, wide-based pan (preferably non-stick) over a high heat with a drizzle of vegetable oil, once hot, add the patty[ies] and press down firmly with a spatula, add the sliced onion to the pan with a pinch of sugar and cook for 5 min

After 5 min, reduce the heat to medium-high, flip the patty[ies] and cook for a further 5 min or until the patties are cooked through (no pink meat!) and the onions have softened,

Once cooked, drizzle your soy sauce over your patty[ies] and onions and cook for 1 min further or until sticky

Meanwhile, cut your potatoes into bite-sized pieces

Add the chopped potatoes to a heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork

Put the bowl in the microwave for 7-8 min or until the potatoes are fork-tender

Once the potatoes are tender add a knob of butter and a pinch of salt to the bowl and stir it together – these are your buttery potatoes

Drain the quick-pickled onion, reserve the pickling liquid and save the bowl

Combine your carrot & cabbage slaw mix with the reserved pickling liquid in the reserved bowl and season with a pinch of sugar and pepper – this is your tangy slaw

Slice your ciabatta[s] in half and place in the toaster for 1-2 min or until warmed through

To build your burger, divide the salad between the toasted ciabatta base[s] and top with the lemongrass patty, sticky onions and toasted ciabatta lid – this is your lemongrass & sticky onion burger

Serve the tangy slaw and buttery potatoes topped with the quick-pickled onion to the side
