Lean Double Beef Cheeseburger With Sweet Potato Fries
Double your main protein. This classic burger will be a hit with the whole fam. You'll pan fry lean beef patties before topping with cheese and loading them into buttery brioche. Add ketchup, mayo and lettuce and serve with fries on the side.

Olive oil, Pepper, Salt, Vegetable oil (or dietary alternatives)
Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Cut your potatoe[s] (skins on) into fries
Add the fries to a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper and give everything a good mix up
Put the tray[s] in the oven for 25-30 min or until crisp and golden
Slice your cheddar cheese thinly
Wash then remove leaves (1 per person!) from your lettuce, pat it dry with kitchen paper and set aside
Chop the inner core into quarters, lengthways
Add your mince to a bowl with a generous pinch of salt and pepper
Give everything a good mix up until thoroughly combined (clean hands are the best way!)
Divide and shape into equal-sized patties (1 per person)
Heat a large, wide-based pan (preferably non-stick with a matching lid) over a high heat
Once hot, add the patty[ies], press down firmly with a spatula and cook for 5 min or until lightly charred (Tip: Cooking for 5? You may need to do this in batches!)
Once lightly charred, flip the patty[ies] and reduce the heat to medium-high and cook for a further 3 min or until browned on both sides
Top with the sliced cheese and your smoked sea salt flakes, cover with a lid and cook for a final 2 min or until the cheese has melted and the burger[s] is cooked through (no pink meat!)
(Doubled your protein? Use 2 pans!)
Slice your brioche bun[s] in half (if required!)
When the fries are almost cooked, add the brioche halves to the baking tray[s], cut side up, on top of the fries and return to the oven for 4-5 min or until warmed through
To build your burger, top each warmed brioche base with a lettuce leaf, cheesy patty, your tomato ketchup, mayo and a warmed brioche lid – this is your mince cheeseburger
Serve the mince cheeseburger with the fries and lettuce wedges to the side
Drizzle the lettuce with a little olive oil and season with a pinch of pepper
