Lamb Wraps, Pea Shoots & Mint Yoghurt
The pairing of mint with lamb is famous for a reason – the bright flavour of mint brings out a subtle sweetness in the meat. We've made the most of this traditional pairing in our super speedy lamb & pea shoot wraps, which are sure to be a hit with all the family. Best of all, they're ready in a flash. Mint!

Olive oil, Pepper, Salt (or dietary alternatives)

Instructions for 2 portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7
Tip: this is to warm your tortillas later! Alternatively, you can just heat them in a microwave
Boil a kettle (you'll only need 50ml [100ml]!)
Dice the tomato[es]
Add the diced tomato to a bowl with a drizzle of olive oil and a pinch of salt and set aside

Heat a dry large, wide-based pan (preferably non-stick) over a high heat
Once hot, add the lamb mince and cook for 4-5 min or until crispy, breaking up with a wooden spoon as you go

Dissolve 1/2 [1] beef stock cube in 50ml [100ml] boiled water

Once crispy, add the cumin seeds to the lamb and cook for 1-2 min further or until fragrant

Add the beef stock to the pan and cook for 1-2 min further – this is your cumin lamb

Meanwhile, add the tortillas to a baking tray
Put the tray in the oven for 2-3 min or until warmed through

Combine the mint sauce and natural yoghurt in a bowl
Season with a pinch of salt and pepper

Top each tortilla with a spoonful of mint yoghurt, cumin lamb, diced tomatoes and a handful of the pea shoots
