Kimchi-Spiced Prawn Brioche, Buttery Soy Potatoes & Salad
Toaster, microwave or kettle-friendly – this is dinner without the cooking. Give toast and butter a summery twist with kimchi-spiced prawn mayo, crunchy lettuce and tomatoes. Serve it with buttery soy potatoes on the side. Perfect.

Note: Microwave ovens vary. Make sure you heat food thoroughly (even if it takes you a little longer than 10 min)

Now, let's get started!
Chop your waxy potatoes in half
Add your chopped potatoes to a large heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork
Put the bowl in the microwave for 6-8 min or until the potatoes are fork-tender

While the potatoes are cooking, trim, then slice your spring onion[s] finely

Combine your kimchi ketchup and mayo in a medium bowl with half your white wine vinegar (you'll use the rest later!) and 1 tsp [1 1/2tsp] [2 tsp] sugar, then mix
Add your cooked prawns and chopped spring onion with a generous grind of pepper and a small pinch of salt
Give everything a good mix up – this is your kimchi prawn mayo

Slice your tomato[es] into rounds
Wash then remove leaves (2 per person!) from your lettuce and set aside, roughly shred the inner core

Slice your brioche bun[s] in half (if required!) and place in the toaster for 1-2 min or until warmed through

Once the potatoes are tender, add a knob of butter with your soy sauce and a pinch of pepper
Give them a good mix up – these are your buttery soy potatoes

To build the burger, top the toasted brioche base with some tomato slices, 2 lettuce leaves, then the kimchi prawn mayo and a toasted brioche lid – this is your kimchi-spiced prawn brioche
Serve the shredded lettuce to the side and drizzle over the remaining white wine vinegar and a little olive oil
Serve the buttery soy potatoes to the side
