Ingredients for 2 people

1 little gem lettuce

2 x 150g British pork loin steaks
2 x 150g British pork loin steaks
6 seeded tortillas

You'll also need

Pepper, Salt, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Trim, then slice the spring onion[s] finely

Slice the apple[s] (skin on) finely into matchsticks

 

Step 1

Add the sliced spring onion and apple matchsticks to a bowl

Add the juice of the lime[s] and a pinch of salt, give everything a good mix up and set aside for later – this is your zingy apple slaw

Tip: Make sure all your apple matchsticks are coated in the lime juice to stop them from browning!

Dice the pork loin steaks into bite-sized pieces, trimming off any large pieces of excess fat

Step 3

Peel and finely chop (or grate) the garlic

Heat a large, wide-based pan (preferably non-stick) with a generous drizzle of vegetable oil over a medium-high heat

Once hot, add the diced pork with the chopped garlic, smoked paprika, dried chilli flakes (can't handle the heat? Go easy!) and a generous pinch of salt and pepper

Cook for 4-5 min or until the pork is cooked through

Meanwhile, chop the coriander roughly, including the stalks

Add the chopped coriander to the zingy apple slaw and give everything a good mix up

Remove most of the leaves from the baby gem lettuce[s] and set aside

Shred the inner core

When the pork is cooked, add the chipotle paste and stir it all together – this is your chipotle pork

Tip: Add a splash of water if your pan is looking a little dry

Add the seeded tortillas to a plate and microwave for 30-40 secs or until warmed through

Serve your seeded tortillas topped with the lettuce leaves, shredded lettuce and the chipotle pork 

Top with the zingy apple slaw
