Japanese-Style Sesame Prawn & Radish Bowl
This dish is inspired by Donburi, a popular Japanese rice dish. For this brown rice version, you'll top it with peppery radishes, king prawns, edamame and a nutty soy, lime and sesame dressing.

Instructions for 2 portion recipe.
Rinse the brown rice, add it to a pot with plenty of cold water and bring to the boil over a high heat
Once boiling, reduce the heat to medium and cook for 15-20 min or until it's tender with a slight bite
Once cooked, drain, return it to the pot and keep covered until serving

Whilst the rice is cooking, top, tail and slice half of the radishes as finely as you can
Chop the remaining radishes into quarters

Trim, then slice the spring onion[s] finely

Roll the lime[s] with your hand on a hard surface (to release more juice) and cut in half

Combine the soy sauce, mirin, half of the toasted sesame oil, the juice of the lime[s] and mix it all together – this is your dressing

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat
Once hot, add the king prawns and edamame beans and cook for 4-5 min or until cooked through
Once cooked, add the remaining toasted sesame oil and give everything a good mix up

Once the rice has cooked, add half of the black sesame seeds and mix everything together – this is your sesame seed rice

Serve the sesame seed rice in bowls with the radishes, sliced spring onion, king prawns and edamame beans over the top
Drizzle over the dressing and sprinkle over the remaining black sesame seeds
