Jacket Potato With Homemade Cheesy Beans

The kids will go mad for this classic crowd pleaser. You'll top fluffy baked potatoes with homemade cheesy beans and an extra helping of creamy mozzarella. Bake again then dive into oozy, cheesy perfection.

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 240ºC/ 220ºC (fan)/ gas 9

Boil half a kettle

Pierce your red potato[es] a few times with a fork, then add to a heatproof bowl and cook in the microwave for 8-9 min or until slightly softened

While the potato[es] is in the microwave, peel and finely chop (or grate) your garlic

Peel and finely chop your brown onion[s]

Trim your green beans

Drain and rinse your cannellini beans

Peel half your Italian hard cheese until you end up with a pile of cheese shavings

Grate the remaining Italian hard cheese finely

Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper

Tear the drained mozzarella into rough, bite-sized pieces

Add the softened red potato[es] to a baking paper-lined baking tray (or two!) with a drizzle of olive oil, then put the tray[s] in the oven for an initial 15-16 min or until crispy on the outside

While the potato is in the oven, heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil

Once hot, add the chopped onion and chopped garlic to the pan and cook for 3-4 min or until slightly softened

Once slightly softened, add your tomato paste and drained cannellini beans with 1/2 tbsp [3/4 tbsp] [1 tbsp] flour, give everything a good mix up and cook for 1 min

Add 200ml [260ml] [350ml] boiled water with your vegetable stock mix, Henderson's Relish, soy sauce and grated Italian hard cheese

Add 1/2 tsp [3/4 tsp] [1 tsp] sugar, mix everything together and cook for 5-6 min or until the sauce has thickened – these are your homemade cheesy beans

Meanwhile, add the trimmed green beans to a large piece of tin foil (or two!) with a pinch of salt, 1 tbsp [1 1/2 tbsp] [2 tbsp] cold water and a very small knob of butter

Scrunch the foil around the green beans to form a tightly sealed parcel[s] and add to a baking tray

Put the tray in the oven for 10-12 min or until the green beans are tender with a slight bite

Once the potato has had an initial 15-16 min, remove the tray[s] from the oven and carefully slice in half down the middle (careful, it will be hot!)

Spoon the homemade cheesy beans over your baked potato[es] and top with the torn mozzarella

Return the tray[s] to the oven for a final 7-8 min or until melted and oozy – this is your jacket potato with homemade cheesy beans

Serve the jacket potato with homemade cheesy beans with the green beans to the side

Sprinkle the Italian hard cheese shavings over the beans and season with a generous grind of black pepper

Tip: Cooking for kids? Leave out the cheese shavings and black pepper!
