Italian-Style Sausage, Basil & Courgette Salad

For this hearty salad, you'll tumble sausages and herby croutons with sweet cherry tomatoes and courgette ribbons, then dress in a fresh basil and balsamic dressing. To complete the dish, sprinkle with Italian hard cheese shavings to serve.

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Add your Cumberland sausages to a baking tray (use tin foil to avoid mess!)

Put the tray in the oven for 20-25 min or until the sausages are golden and cooked through

Meanwhile, chop your basil finely, including the stalks

Chop your baby plum tomatoes in half

Combine your Dijon mustard, chopped basil, balsamic vinegar, and 2 tbsp [3 tbsp] [4 tbsp] olive oil with a pinch of salt and sugar in a very large bowl and give it a good mix up – this is your Italian dressing

Peel lengths off your courgette[s] until you end up with a pile of courgette 'ribbons'

Shave your Italian hard cheese with a peeler, until you end up with a pile of cheese shavings

Once you can't peel anymore, crumble the remaining cheese

Tear your ciabatta[s] into bite-sized pieces

Add the ciabatta pieces to a separate baking tray (or two!) with your dried oregano, a drizzle of olive oil and a pinch of salt and give everything a good mix up

Put the tray[s] in the oven for 5-6 min or until golden and crisp

Once done, remove the sausages from the oven and slice them on a diagonal into bite-sized pieces

Wash your salad, then add all of the ingredients to the Italian dressing and give everything a good mix up – this is your Italian-style sausage, basil & courgette salad
