We've given Sausage, chips and beans an Italian transformation with this delicious dish. The inclusion of crispy sage gives this dish real punchy Italian flavour, which is reinforced with the balsamic vinegar infused butter bean ragu.

Ingredients for 2 people

300g potatoes

You'll also need

Olive oil, Pepper, Salt, Sugar (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Place the Cumberland sausages on a baking tray (lightly oil the tray to prevent sticking!)

Put them in the oven for 30 min or until golden brown and cooked through

Cut the potatoes into wedges and then cut them in half lengthways

Add them to a separate baking tray (use tin foil to avoid mess!) with a drizzle of olive oil and a pinch of salt and pepper and mix well

Place in the oven and cook for 25 min

Heat a pan (preferably non-stick) with 2 tbsp [4 tbsp] olive oil over a medium-high heat

Once hot, add the sage leaves and cook for 30 sec until crispy

Set aside on a piece of kitchen paper to drain the excess oil

Reserve the pan for later

Dice the onion and the garlic finely 

Return the reserved pan to a medium heat and add the diced onion with a pinch of salt

Cook for 5-6 min until softened

Add the diced garlic and cook for a further 1-2 min

Add the Italian balsamic vinegar and cook for 1 min until evaporated

Add the drained butter beans, chopped tomatoes, bay leaves and tomato paste with a large pinch of salt and sugar

Cook for 8-10 min until reduced

After the potatoes have been in the oven for 25 min, sprinkle the dried basil and oregano over the potatoes and mix well

Return to the oven for a final 5 min

Serve the sausages, chips and beans (discard the bay leaves), topped with the crispy sage
