Irish Spice Bag Chicken Burger With Chips And Curry Sauce

Try this Irish takeaway sensation burger-style. You'll coat chicken in five-spice before pan-frying till crispy. Load it into brioche with chips, roasted pepper and spring onion and finish with curry sauce on the side for dipping.

You'll also need

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 240ºC/ 220ºC (fan)/ gas 9, then take your chicken out of the fridge, open the packet and let it air

Cut your potatoes (skins on) into chips

Deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into large chunks

Trim, then chop your spring onion[s] into thirds

Add the chips to one side of a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and give everything a good mix up

Add the chopped pepper to the other side of the tray[s] and put it in the oven for an initial 15 min

Meanwhile, add your chicken breast strips to a medium bowl with half your five-spice mix, half your cornflour (you'll use the rest later!), 2 tbsp [3 tbsp] [4 tbsp] flour and a generous pinch of salt and pepper

Mix everything together – this is your coated five-spice chicken

After an initial 15 min, remove the tray[s] from the oven and add the chopped spring onions to the peppers

Add a small drizzle of vegetable oil and sprinkle over the remaining five-spice mix and 1/2 tsp [3/4 tsp] [1 tsp] sugar

Give everything a good mix up and put the tray[s] in the oven for 10-15 min or until everything's tender and slightly charred – these are your five-spice vegetables & chips

Heat a large, wide-based pan (preferably non-stick) with a very generous drizzle of vegetable oil over a high heat

Once hot, add the coated five-spice chicken and and cook for 5-6 min on each side or until golden and cooked through (no pink meat!) – this is your crispy five-spice chicken

Slice your brioche bun[s] in half (if required!) and add to a baking tray, cut side up, and put the tray in the oven for 4-5 min or until warmed through

When everything's nearly ready, add the remaining cornflour and your curry powder to a small bowl with your ginger & garlic paste and your chicken stock mix

Gradually stir in 140ml [180ml] [220ml] boiled water (this is to ensure there's no lumps!) – this is your curry sauce mix

Put the curry sauce mix in the microwave for 2 min or until thickened, stirring half way – this is your curry sauce

To build your burger, add the five-spice vegetables and crispy five-spice chicken to the toasted brioche base, then spoon over some of the curry sauce and top with a toasted brioche bun lid – this is your Irish spice bag chicken burger

Serve the Irish spice bag chicken burger with the chips and the remaining curry sauce to the side
