Honey Mustard Sausage & Apple Salad
For this hearty salad, you'll layer peppery sausages over crisp apple, sweet roasted red onion, potato and seasonal salad. Add croutons for crunch and drizzle with a sticky honey mustard dressing to serve.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Peel and cut your red onion[s] into wedges
Cut your potato[es] (skin on) into small, bite-sized pieces

Add the onion wedges, chopped potato and sausages to a large baking tray with a drizzle of olive oil and a pinch of salt
Tip: Cooking for 4 or more? Use 2 trays!
Put the tray[s] in the oven for an initial 20-25 min or until the sausages and potatoes are golden

Meanwhile, combine your wholegrain mustard, honey and cider vinegar in a large bowl with 2 tbsp [3 tbsp] [4 tbsp] olive oil, a splash of cold water and a grind of black pepper – this is your honey mustard dressing

Tear your ciabatta[s] into bite-sized pieces
Once the sausages are golden, remove the tray[s] from the oven and add the torn ciabatta with a drizzle of olive oil and a pinch of salt and pepper
Return the tray[s] to the oven for 6-8 min or until the ciabatta is golden and crisp and the sausages are cooked through (no pink meat!)

Whilst everything is cooking, cut your apple[s] (skin on) into matchsticks

Wash your salad, then pat it dry with kitchen paper
Add the salad, apple matchsticks, croutons, roast potato and roasted onion to the bowl with the honey mustard dressing
Give everything a good mix up – this is your honey mustard & apple salad

Once done, cut each cooked sausage into 3 pieces on the diagonal

Serve the chopped sausages over the honey mustard & apple salad
