Honey Lamb Kofta

These Turkish lamb Kofta are beautifully spiced with sticky honey, cumin and garlic. Served on a simple bulgur wheat salad with a dollop of cool Greek yoghurt, they're an exciting dish to master with endless possibilities. Koftastic.

Ingredients for 2 people

150g bulgur wheat

You'll also need

Olive oil, Pepper, Salt (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7

Boil a kettle

Add the bulgur wheat to a pot with 180ml (360ml) of boiling water, cover with a lid and place on a medium-low heat

Simmer for 5 min or until almost all the water is absorbed

Remove the bulgur from the heat and allow to rest with the lid on for 10 min or until all water has absorbed

Meanwhile, peel and finely dice the red onion(s)

Peel and grate or finely chop the garlic

Combine the lamb mince, garlic, ground cumin, honey and half the red onion with a generous amount of salt and pepper in a bowl

Add 3 tbsp (6 tbsp) of cooked bulgur

Mix thoroughly (use your hands for ease)

Divide the mixture into 6 (12) balls

Shape the balls into oval shapes (use wet hands to help the shaping process)

These are your kofta

Refrigerate the kofta until step 7 to help them firm up

Dice the tomato(es) finely

Remove the mint leaves and chop finely, discarding the stalks 

Chop the parsley finely, including the stalks

Combine the tomato, mint, parsley and remaining red onion in a bowl and set aside until step 8

Mix the yoghurt with 1 tbsp (2 tbsp) of olive oil and season generously with salt and pepper

Heat a large, dry, wide based pan (preferably non stick) on a high heat

When hot, add the lamb koftas

Cook for 5 min, turning them regularly so they cook evenly

Once charred on all sides, transfer them to a baking tray (use foil to avoid mess)

Place in the oven for 8-10 min until they are firm to touch

Mix the bulgur wheat through the tomato, red onion and chopped herbs and season generously with salt and pepper

Add a drizzle of olive oil and mix well

Serve the kofta with the bulgur salad and yoghurt
