Hoisin King Oyster Mushroom Bao With Sesame Fries
For mushrooms that shine, you'll fill fluffy bao buns with tender, umami-rich king oyster mushrooms glazed in a sweet and savoury hoisin sauce. Then top with pickled cucumber and serve with golden sesame fries for the perfect crispy sidekick.

 You'll also need
Flour, Pepper, Salt, Sugar, Vegetable oil (or dietary alternatives)
Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Cut your potatoes (skins on) into fries
Add the fries to a baking paper-lined baking tray with a drizzle of vegetable oil and a small pinch of salt and pepper
Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp
Put a separate large baking tray in the oven with a drizzle of vegetable oil to heat up
 
 Pull your king oyster mushrooms lengthways into long thick strands
 
 Combine your five-spice mix with 1 tbsp [1 1/2 tbsp] [2 tbsp] vegetable oil in a large bowl
Add the pulled king oyster mushroom to the bowl and give everything a good mix up until fully coated
Once coated, add your cornflour with 1 tbsp [1 1/2 tbsp] [2 tbsp] flour and give it all stir until covered in the flour
 
 Remove the preheated baking tray from the oven, add the floured mushroom
Put the tray in the oven for 15-17 min or until golden and crispy
 
 Slice your cucumber finely
Add the sliced cucumber to a small bowl with your rice vinegar and a grind of black pepper
Give it a good mix up and set aside to pickle - this is your pickled cucumber
Trim and chop your spring onion[s] in half, then cut lengthways into thin strips
 
 Combine your hoisin sauce, ginger & garlic paste and gluten free soy sauce in a small bowl with 1 tsp [1 1/2 tsp] [2 tsp] sugar – this is your hoisin sauce
Once the mushroom is crispy and cooked, stir through half the hoisin sauce – this is your hoisin king oyster mushroom
 
 Pierce your bao bun packet[s] with a few holes and microwave for 1-2 min
Once your chips are done, sprinkle most of your toasted sesame seeds over (save some for garnish!) – these are your sesame fries
 
 To build, fill each warmed bao bun with some of the pickled cucumber, the hoisin king oyster mushroom, and the remaining hoisin sauce
Garnish with the chopped spring onion and the remaining toasted sesame seeds
Serve the sesame fries and the remaining pickled cucumber to the side
