Green Goddess Salad With Glorious Grains, Avocado & Feta
Green goddess dressing is the star of this flavour-packed salad. You'll build your bowl with hearty grain mix, tangy feta and pumpkin seeds before smothering the lot with your creamy avo, yoghurt and lime dressing. Banging. 3 or more of your 5/day.

Instructions for 2 [for 3] [for 4] portion recipe.
Cut your avocado[s] in half lengthways, around the stone
Remove the stone[s] using a spoon, then scoop out the avocado flesh and slice finely
Wash your lettuce, then pat it dry with kitchen paper and roughly shred
Wash your salad, then pat dry with kitchen paper

Dice your cucumber finely
Roll your lime[s] with your hand on a hard surface (to release more juice) and cut in half

Add 1/4 of the sliced avocado (you'll use the rest later!) to a food processor with your basil, natural yoghurt and the juice of half the lime[s]
Add a drizzle of olive oil with a splash of cold water and a generous pinch of salt, pepper and sugar
Blitz until smooth – this is your green goddess dressing
Cut the remaining lime into 1 wedge per person

Heat a small, dry, pan over a medium heat
Once hot, add your pumpkin seeds and cook for 2-3 min or until toasted and lightly golden
Tip: Watch them like a hawk to make sure they don't burn!

Squeeze your pouch[es] of glorious grains to separate the grains
Tear the top corner of the pouch[es] (just a little!) and microwave for 2 min or until piping hot
Tip: If you're cooking two or more pouches, pop them in together but increase the microwave cook time accordingly

Combine the glorious grains with a generous pinch of salt and a drizzle of olive oil in a large bowl and give everything a good mix up

Add the shredded lettuce, salad and diced cucumber to the bowl with half the green goddess dressing (save the rest for a topping!)
Give everything a good mix up until well combined – this is your green goddess salad

Serve the green goddess salad and top with the remaining avocado and the remaining dressing
Top with the toasted pumpkin seeds and crumble over your feta
Garnish with a lime wedge
