Greek-Style Pork & Grain Stuffed Sourdough Pitta

Do it like the Greeks with this flavour-packed pita. You'll load paprika-spiced pork and grains into sourdough pitta before baking till golden. Serve up with a mixed grain salad and cucumber and tomato yoghurt for dipping.

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Peel and finely dice your red onion[s]

Combine your sausage meat in a bowl with half your glorious grains, half the diced onion (you'll use the rest later), your dried oregano and ground smoked paprika

Season with a pinch of salt and pepper

Give everything a good mix up until thoroughly combined (clean hands are the best way!) – this is your pork & grain mixture

Slice open the top of your sourdough pitta[s]

Fill your sliced pitta with the pork & grain mixture

Close the pitta and press down firmly

Add the filled pitta to a baking tray (or two!)

Place a second baking tray on top to weigh it down slightly

Put the stacked baking tray[s] in the oven for 20 min or until the pitta is golden and the pork is cooked through (no pink meat!) – this is your Greek-style pork & grain stuffed sourdough pitta

Add the remaining diced onion to a large bowl with your red wine vinegar and a pinch of salt and sugar

Set aside for 5 min to pickle – this is your quick pickled onion

Chop your tomato[es] finely

Dice your cucumber finely

Add the diced cucumber, diced tomato and the remaining glorious grains to the quick pickled onion with a drizzle of olive oil and a pinch of salt – this is your mixed grain salad

Serve the Greek-style pork & grain stuffed sourdough pitta with the mixed grain salad to the side

Drizzle over your natural yoghurt
