1.

Before you begin...

Get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)

Step 1
2.

Now, let's get started!

Boil a kettle, then grate your cucumber

Separate your mint from your dill, and set aside the dill for later

Strip the mint leaves from their stems and chop them roughly, discard the stems

Cut your lemon[s] into wedges

Step 2
3.

Add your vegetable stock mix to a heatproof bowl with your sultanasdiced apricots and couscous

Add 200ml [300ml] [400ml] boiled water, give everything a good mix up, cover and set aside for later – this is your fruity couscous

Step 3
4.

Add your natural yoghurt to a bowl with the grated cucumber and the chopped mint

Add a drizzle of olive oil and the juice of half your lemon wedges and stir it all together – this is your tzatziki

Step 4
5.

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat

Cut your halloumi into 3 slices per person

Once hot, add the halloumi slices and cook for 1-2 min on each side or until golden

Step 5
6.

Whilst the halloumi is cooking, dice your tomato[es] finely

Chop your dill roughly, including the stalks

Step 6
7.

Add your flaked almonds and diced tomato to the fruity couscous with a generous drizzle of olive oil and a big squeeze of lemon juice and fluff everything up with a fork

Step 7
8.

Serve the golden halloumi with the tzatziki and fruity couscous to the side

Garnish with the chopped dill and a lemon wedge

Enjoy!
