Goats' Cheese Rarebit Toasts With Pomegranate & Orange Salad

This cheesy rarebit toast is the G.O.A.T. You'll smother crispy ciabatta with creamy goats' cheese sauce before baking till golden. Serve with a pomegranate and orange salad on the side. Banging.

Pepper, Salt, Milk, Olive oil, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potatoes (skins on) into wedges

Add your wedges to a baking tray with a drizzle of vegetable oil and a pinch of salt and pepper

Give everything a good mix up and put the tray in the oven for 20-25 min or until golden and crisp

Cut the top and bottom off your pomegranate[s], then slice into quarters

Add the pomegranate quarters to a large bowl filled with cold water

Tip: This helps prevent mess and makes separating the pith easier!

Separate the pomegranate seeds from the white pith and discard the pith, then drain the pomegranate seeds in a fine sieve and return to the large bowl

Cut the top and bottom off your orange[s], then cut the skin away from the flesh and discard the skin

Slice the orange flesh into rounds

Strip your thyme leaves from their stems and chop them roughly, discard the stems

Combine the chopped thyme leaves and honey in a small bowl – this is your thyme honey

Add your goats' cheese to a bowl with your cornflour and a generous pinch of salt and pepper and give everything a good mix up

Add the goats' cheese mixture to a pot with 100ml [150ml] [200ml] milk and bring to a boil over a medium heat

Cook for 1-2 min, stirring frequently, or until the cheese has melted and thickened, then set aside for later – this is your goats' cheese rarebit sauce

Slice your ciabattas in half and add to one side of a baking tray

Add your pumpkin seeds to the other side of the baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and put the tray[s] in the oven for 3-4 min or until everything is toasted and lightly golden

Tip: Watch them like a hawk to make sure they don't burn!

Once toasted, remove the tray[s] from the oven and transfer the roasted pumpkin seeds to a plate

Top the toasted ciabattas with the goats' cheese rarebit sauce

Return the tray[s] to the oven and cook for 6-8 min or until the rarebit sauce is lightly browned – these are your goats' cheese rarebit toasts

Meanwhile, wash your salad, then pat dry with kitchen paper

Add your red wine vinegar and orange rounds to the bowl with the pomegranate seeds with 2 tbsp [3 tbsp] [4 tbsp] olive oil and a pinch of salt and pepper

Add the salad and toss – this is your pomegranate & orange salad

Serve the goats' cheese rarebit toasts with the wedges and pomegranate & orange salad to the side

Drizzle the thyme honey over the rarebit toasts and top the salad with the roasted pumpkin seeds
