Goats' Cheese & Red Onion Flatbreads, Rocket Salad
Goats' cheese and caramelised onion are a classic combo for a reason. However, caramelising onions can take ages when done properly. We've sped up the process for these topped flatbreads by adding onion marmalade to quick-sautéed red onion. Serve alongside a balsamic rocket salad for a stylish veggie supper.

Instructions for 2 portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6
Peel and finely slice the red onions

Heat a large, wide-based pan (preferably non-stick) with a lid, with a large drizzle of olive oil over a medium heat
Once hot, add the sliced red onion with a generous pinch of salt and reduce the heat to low
Cover and cook for 6-7 min or until softened

Meanwhile, add the flaked almonds to a baking tray and put them in the oven for 3 min or until they've darkened slightly in colour (toasted)

Crumble the goats' cheese and set aside

Combine the balsamic vinegar with a generous drizzle of olive oil and a large pinch of salt, pepper and sugar – this is your balsamic dressing
Slice the cherry tomatoes in half and set aside

Once softened, add the onion marmalade to the red onion and cook for 1 min further
Remove the pan from the heat

Add the naan breads to a baking tray
Spread the onion mixture over the naan breads and top with the crumbled goats' cheese and black olives
Put the naan breads in the oven for 15 min or until the goats' cheese is starting to crisp and brown – these are your Goats' Cheese & Red Onion Flatbreads

Wash, then pat the rocket dry
Toss the rocket salad, sliced cherry tomatoes and toasted almonds with the balsamic dressing
Tip: don't dress the salad until serving or it will go soggy
Serve the salad alongside the Goats' Cheese & Red Onion Flatbreads and enjoy!
