Garlic Crusted Pork Loin Bake With Chive & Mustard Sauce
This fuss-free traybake is a walk in the park. You'll roast a medley of potato, apple and carrot, then top with pork loins coated in a garlicky crumb. Finish with a tangy mustard and chive sauce and bake till golden.

Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7, then take your steak out of the fridge, open the packet and let it adjust to room temperature
Peel and cut your red onion[s] into wedges
Cut your apple[s] into wedges and discard the core
Top, tail, peel and slice your carrot[s] into discs
Chop your potatoes (skins on) into bite-sized pieces

Add the chopped potatoes, carrot discs, onion wedges and apple wedges to an oven-proof dish with a drizzle of vegetable oil and a pinch of salt and pepper
Give everything a good mix up and put the dish in the oven for an initial 20 min

Boil a kettle
Peel and grate your garlic
Combine the grated garlic with your panko breadcrumbs, 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil and a pinch of salt and pepper in a bowl – these are your garlic breadcrumbs

Once the potatoes have had an initial 20 min, remove the dish from the oven and top the vegetables with the pork loin steak[s]
Sprinkle over the garlic breadcrumbs then return the dish to the oven and cook for a further 20-25 min or until the pork is cooked through (no pink meat!) and the breadcrumbs are golden

While the pork is cooking, chop your chives finely
Combine half the chopped chives (save the rest for garnish!) with your soft cheese, Dijon mustard, chicken stock mix and 75ml [100ml] [125ml] boiled water – this is your chive & mustard sauce

Use this time to clear up, set the table, have a cup of tea or simply chill!

Once the pork is cooked through, remove the dish from the oven and pour in the chive & mustard sauce
Return the dish to the oven and cook for a further 2-3 min or until the sauce has slightly thickened – this is your garlic crusted pork loin bake with chive & mustard sauce

Serve the garlic crusted pork loin steak with the roasted vegetables to the side
Drizzle over the chives & mustard sauce and garnish with the remaining chopped chives
