French-Style Plant-Based Burger With Onion Gravy

Say allez to this French onion soup-inspired plant-based burger. You'll load meat-free patties topped with caramelised onion and cheeze into brioche. Serve with lashings of onion gravy and matchstick fries on the side before you touch, pause, dunk. Here's one for Les Blues.

You'll also need

Vegetable oil, Sugar, Pepper, Salt, Flour, Olive oil, Water (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Peel and finely slice your brown onion[s]

Heat a pot over a low heat with a drizzle of vegetable oil and once hot, add the sliced onion, your dried thyme, a pinch of salt and 1 tsp [1 1/2 tsp] [2 tsp] sugar

Cook for 20-25 min, stirring frequently, or until the onion has softened and caramelised – this is your caramelised onion

While the onion is caramelising, slice your potatoes (skins on) into thin discs, then slice each potato disc into matchsticks

Add the potato matchsticks to a baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper

Give everything a good mix up and put the tray[s] in the oven for 20-25 min or until golden and crisp – these are your matchstick fries

Boil a kettle

Line a separate baking tray (or two!) with tin foil

Add your meat-free patty[ies] to the tray[s] and put the tray[s] in the oven for 10-12 min or until cooked through

Meanwhile, combine your Dijon mustard (not a fan of mustard? Just add a little!) and mayo in a bowl – this is your Dijon mustard mayo

Slice your brioche bun[s] in half

Once caramelised, transfer half the caramelised onion to a bowl and set aside (you'll use this later!)

Return the remaining caramelised onion in the pot to the heat with 2 tsp [3 tsp] [4 tsp] flour and cook for 1 min

Add your vegetable stock mix and 250ml [325ml] [425ml] boiled water and cook for 4-5 min or until the sauce thickens to a gravy-like consistency – this is your onion gravy

Once cooked, remove the meat-free burger patty[ies] from the oven, push to one side of the baking tray[s] and top with the reserved caramelised onion and your cheese flavour slice[s]

Add your brioche halves to the other side of the baking tray[s], then return to the oven for 4-5 min or until the cheeze has melted and the brioche are warmed through – this is your cheezy plant-based patty & toasted brioche

Tip: Cooking for 3 or more? Use 2 trays!

Wash your salad, then pat dry with kitchen paper

To build your burger, spread the Dijon mustard mayo over the toasted brioche base, then top with a handful of salad, a cheezy plant-based patty, a drizzle of onion gravy and a toasted brioche lid – this your French-style plant-based burger with onion gravy & Dijon mayo

Serve the French-style plant-based burger with onion gravy & Dijon mayo with the remaining onion gravy, matchstick fries and remaining salad to the side

Drizzle your white wine vinegar and a little olive oil over the salad
