Free Range Chicken Milanese With Tomatoey Basil Potatoes

Our healthier twist on Milanese balances wholesome green beans, potatoes and red onion with extra crunchy baked free range chicken. You'll roast the veg in a tomatoey stock, and garnish with basil to serve. Easy-Milanese!

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7, boil half a kettle and take your chicken out of the fridge, open the packet and let it air

Chop your potatoes (skins on) into small bite-sized pieces

Chop your tomato[es] into wedges and trim your green beans

Peel and cut your red onion[s] into wedges

Add the chopped potatoes, tomato wedges and onion wedges to a baking tray lined with tin foil (to avoid mess!)

Add the dried oregano with a drizzle of vegetable oil and a generous pinch of salt and pepper and put the tray in the oven for an initial 25 min

Tip: Cooking for 3 or more? Use two trays!

Meanwhile, cover your free range chicken breast portion[s] in cling film and bash them with a rolling pin until evenly flattened to approx. 1cm in thickness

Combine your panko breadcrumbs with a drizzle of olive oil and a pinch of salt on a large plate

Add the juice of half your lemon to a bowl with 2 tbsp [3 tbsp] [4 tbsp] of olive oil and a generous pinch of salt and pepper

Stir everything together until the lemon and oil have combined – this is your lemon oil

Dip the flattened chicken in the lemon oil then coat with the breadcrumbs until both sides are well coated

Add the coated chicken to one side of an oiled baking tray

Put the tray in the oven for 25 min or until the chicken is cooked through (no pink meat!) – this is your chicken Milanese

Meanwhile, dissolve your chicken stock mix in 150ml [200ml] [250ml] boiled water

After an initial 25 min, remove the tray[s] of vegetables from the oven and crush the cooked tomato wedges with the back of a fork

Pour over the chicken stock and top with the trimmed green beans

Return the tray to the oven for a final 12-15 min or until the beans are tender and the stock has reduced

While the chicken and vegetables are cooking, chop your basil finely, including the stalks

Cut the remaining lemon into 1 wedge per person

Once cooked, transfer the chicken Milanese to a clean board and leave to rest for a couple of min before slicing

Remove the vegetables from the oven and mix them all up until everything's coated in the tomatoey sauce – these are your tomatoey potatoes & green beans

Serve the tomatoey potatoes & green beans with the chicken Milanese to the side

Sprinkle over the chopped basil and garnish with the lemon wedges
