Flat Iron Steak, Creamed Spinach, Smoked Salt Chips & Gravy
Spoil yourself with the classic steakhouse experience at home. Pan-seared flat iron steak meets a side of indulgent creamed spinach. Add smoked salt chips and a rich gravy and you've got an instant classic.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7, then take your steak out of the fridge, open the packet and let it adjust to room temperature
Boil a kettle
Cut your potato[es] (skins on) into chips, then add the chips to a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of pepper
Give everything a good mix up and put the tray[s] in the oven for 20-25 min or until golden and crisp

Wash your spinach then add to a colander and pour boiled water all over it so that it starts to wilt
Rinse the wilted spinach under cold running water until it's cool
Once cool, squeeze as much water out of the spinach as you can – this is your blanched spinach
Crush your garlic open by squashing it with the side of a knife and discard the skin

Add the blanched spinach to a food processor with your crushed garlic
Add a little drizzle of olive oil, a small splash of water and a generous pinch of salt and pepper
Blitz until smooth – this is your blitzed spinach

Transfer the blitzed spinach to a pot with your clotted cream and most of your grated Italian hard cheese (save some for a topping!) and half your smoked salt (you'll use the rest later!)
Cook over a medium heat for 3-4 min or until bubbling and thickened – this is your creamed spinach
Set aside, off the heat (you'll reheat it later!)

Reboil a kettle and heat a large, wide-based pan (preferably non-stick) over a high heat
Pat your flat iron steak[s] dry with kitchen paper, then drizzle them with vegetable oil and season with a small pinch of salt on both sides
Once very hot, add the flat iron steak[s] to the pan
For rare, cook for 2-3 min max on each side; for medium-rare, cook for 3-4 min on each side; for medium, cook for 4-5 min on each side

Once the steak[s] is cooked, transfer to a clean board to rest for 3-4 min and reserve the pan
Combine your gravy base with 125ml [200ml] [250ml] boiled water and whisk thoroughly – this is your gravy mix
Return the reserved pan to a medium-high heat, then add your gravy mix and cook for 1-2 min, stirring regularly, or until thickened – this is your gravy

Return the creamed spinach to a medium heat with a pinch of salt and pepper and cook for 30 secs or until bubbling
Slice the rested steak finely
Once the chips are ready, season with the remaining smoked salt and give them a good mix up – these are your smoked salt chips

Serve the sliced steak and drizzle over the gravy
Serve the creamed spinach and sprinkle over the remaining grated Italian hard cheese
Serve the smoked salt chips to the side
