Fish With Crispy Potatoes & Dill Mayo

This simple dish packs all the flavours of classic fish and chips but in a lighter way. Enjoy omega-3-rich basa fillets which are pan-fried and served with crisp potatoes (your chips) and a fresh and aromatic dill mayonnaise.

Ingredients for 2 people

2 courgettes
2 courgettes
2 basa fillets
2 basa fillets
1 tbsp apple cider vinegar
1 tbsp apple cider vinegar
300g potatoes
300g potatoes
10g dill
10g dill
1 garlic clove

52ml free-range mayonnaise
52ml free-range mayonnaise

Olive oil, Pepper, Salt, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6 

Cut the potatoes (skins on) into equal bite-sized pieces

Top, tail and cut the courgettes into quarters lengthways, then in half to create batons

Heat a large, wide-based pan (preferably non-stick) with a large drizzle of vegetable oil over a medium-high heat

Once hot, carefully add the potatoes and season with a big pinch of salt 

Cook for 5 min, or until the potatoes are browning 

Tip: careful! The oil may spit a little after adding the potatoes

Meanwhile, chop the dill finely, including the stalks

Combine the mayonnaise, apple cider vinegar and most of the dill (save the rest for garnish) in a bowl

Add 1 tbsp [2 tbsp] water and a drizzle of olive oil – this is your dill mayo

Add the courgette to the potatoes and cook for a further 5 min

Meanwhile, peel and finely chop (or grate) the garlic

Transfer the vegetables to a baking tray (keep the pan and oil for later!)

Put the tray in the oven for 8-12 min, or until both the courgettes and potatoes are cooked through

Once done, season with salt and pepper and set aside

Return the reserved pan to a medium-high heat with a drizzle of olive oil

Add the garlic and leave it to sizzle for 30 sec

Place the basa over the garlic and cook for 3-4 min

Season lightly with salt and pepper

Flip the fish and season the other side lightly with salt and pepper

Cook for 2 min or until cooked through

Tip: your fish is done when it turns opaque and flakes easily

Serve the fish with the vegetables to the side

Spoon over the dill mayo and garnish with the remaining chopped dill
