Festive Finger Food - Prawn Lettuce Cups
Our finger food is perfect for adding the wow-factor to your festive celebrations! Your guests won't be able to keep their hands off these. Makes 6 pieces to serve as a starter for 2 people or canapés for 6 people (double if bought as part of a box for 4). (Dairy-free: see our FAQs for details).

Salt, Vegetable oil (or dietary alternatives)

Instructions for 2 portion recipe.
Run a small knife along the back of the king prawns, cutting halfway through (make sure not to cut the whole way through) to butterfly the prawns

Peel and finely chop the garlic

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Once hot, add the chopped garlic and cook for 30 sec or until fragrant

Once fragrant, add the butterflied prawns and chilli flakes (Can't handle the heat? Go easy!) for 3 min or until they're cooked through – these are your garlic chilli prawns
Once done, transfer the prawns to a bowl and set them aside to cool

Meanwhile, cut the roots from the little gem lettuce[s] and separate the leaves
Pick 6 [12] of the biggest lettuce leaves – these are your lettuce cups

Cut the lime[s] into wedges
Slice the red chilli[es] finely

Add the chilli jam to the cooled prawns and give everything a good mix up – these are your sweet chilli prawns

Fill each lettuce cup with the sweet chilli prawns
Serve the sweet chilli prawn cups and garnish with the sliced red chilli (Can't handle the heat? Go easy!), fried onions and lime wedges
