Festive BLT With Cheesy Garlic Baked Wedges
You had me at BLT. For a festive take on this classic sandwich, you'll smother sweet cranberry mayo over layers of crispy bacon, lettuce and tomato. Drizzle over sticky onion marmalade and serve with a side of cheesy garlic wedges.

Cooking instructions
Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ gas 7
Cut your potatoes (skins on) into wedges
Peel and finely chop (or grate) your garlic

Add the wedges to a baking tray with the chopped garlic,ground smoked paprika and a drizzle of vegetable oil
Season with a pinch of salt and pepper and give everything a good mix up
Put the tray in the oven for an initial 20-25 min or until the wedges have softened and are starting to crisp

Line a separate baking tray with tin foil (to avoid mess!) and add your smoked streaky bacon
Put the tray in the oven for 10-15 min or until golden and crispy

While the bacon and wedges are cooking, cut half your tomato[es] into slices
Dice the remaining tomato[es] finely
Wash your lettuce, then pat it dry with kitchen paper and shred roughly

Add your mayo to a bowl with your cranberry sauce and a good grind of pepper – this is your cranberry mayo

Once the chips are done, transfer them to one side of the tray and top with grated Italian hard cheese
Add your ciabattas to the other side and put the tray in the oven for 5 min or until they're warmed through and the cheese has melted
Carefully slice the warmed ciabattas in half before serving

Loosen your onion marmalade with 1 tsp [1 1/2 tsp] [2 tsp] cold water

To build, spread the cranberry mayo evenly between the ciabatta bases and top with your crispy onions, crispy bacon, sliced tomato, shredded lettuce, onion marmalade and ciabatta lids
Serve the cheesy garlic wedges and remaining shredded lettuce to the side
Top the shredded lettuce with the diced tomato, a drizzle of olive oil and a pinch of salt and pepper and enjoy!
