Falafel & Roast Pepper Couscous Bowl With Romesco Yoghurt

Toaster, microwave or kettle-friendly – this is dinner without the cooking. You'll load warm falafels over roasted pepper and cherry tomato sumac couscous before dolloping over cooling romesco yoghurt. Banging.

Before you begin, get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

You can only heat your food once, then enjoy straight away

Note: Microwave ovens vary. Make sure you heat food thoroughly (even if it takes you a little longer than 10 min)

Now, let's get started!

Boil half a kettle

Drain your roasted red peppers

Add your couscous to a medium heatproof bowl with your vegetable stock mix, drained roasted red peppers and a pinch of salt and pepper

Add 200ml [300ml] [400ml] boiled water, cover with a clean tea towel and set aside until all of the liquid has been absorbed

Meanhile, chop your cherry tomatoes into quarters

Wash your salad and pat dry with kitchen paper

Combine your natural yoghurt with a pinch of salt and pepper in a small bowl

Add your romesco sauce and gently swirl through the yoghurt (don't fully mix!) – this is your romesco yoghurt

Once the couscous has absorbed all the liquid, fluff with a fork and add most of the chopped cherry tomatoes (you'll use the rest later!) and your ground sumac

Give everything a good mix up – this is your roast pepper couscous

Add your falafel to a plate and put in the microwave for 1-2 min or until warmed

Serve the warmed falafel over the roast pepper couscous with the salad and remaining chopped cherry tomatoes to the side

Drizzle the salad with a drizzle of olive oil

Dollop the romesco yoghurt over the top and season with a pinch of pepper

Enjoy!
