Easy Triple Cheese Pizza
Enjoy crispy homemade pizza with minimum effort and maximum cheese. When your pizza's nearly done, whip up a balsamic-dressed side salad with a handful of seeds for crunch.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 240°C/ 220°C (fan)/ gas 9
Put a large baking tray (or two!) in the oven to heat up (this will stop the pizza bottom from going soggy!)
Peel and finely chop (or grate) your garlic

Grate your lighter cheese and Italian hard cheese
Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper
Tear the drained mozzarella into rough bite-sized pieces

Add your chopped garlic, dried oregano and tomato paste to a small bowl with a drizzle of olive oil and 2 tbsp [3 tbsp] [4 tbsp] cold water
Season with a pinch of salt, sugar and pepper and mix to combine – this is your tomato sauce

Add your pizza base[s] to the heated baking tray[s], divide and spoon the tomato sauce over them evenly
Top with the grated lighter cheese, Italian hard cheese and torn mozzarella
Put the tray[s] in the oven for 10-15 min or until the cheese is bubbling and starting to brown – these are your triple cheese pizza

Meanwhile, peel and chop your shallot[s] as finely as you can

Add the chopped shallot, balsamic vinegar, 2 tbsp [3 tbsp] [4 tbsp] olive oil and 1 tsp [1 1/2 tsp] [2 tsp] sugar to a large mixing bowl
Season generously with both salt and pepper and mix to combine – this is your balsamic dressing

Wash your salad, then pat it dry with kitchen paper
Once the pizza[s] is nearly done, add your salad and pine kernel & seed mix to the bowl with the balsamic dressing and give everything a good mix up – this is your seeded balsamic salad

Serve the triple cheese pizza with the seeded balsamic salad to the side
