Easy Potato-Topped Chicken, Mustard & Kale Pie

This potato-topped chicken casserole is as easy as pie to prep. You'll combine diced chicken, soft cheese and shredded kale in an oven-proof dish and top the lot with grated potato and cheese. Pop it in the oven to bubble away until it's crisp, golden and very tempting! (Gluten-free, suitable for coeliacs).

Ingredients for 2 people

40g mature cheddar
40g mature cheddar
100g soft cheese
100g soft cheese
250g British diced chicken breast
250g British diced chicken breast
1 chicken stock cube
1 chicken stock cube
120g shredded kale
120g shredded kale
300g potatoes
300g potatoes
1 tbsp cornflour
1 tbsp cornflour
1 tbsp Dijon mustard
1 tbsp Dijon mustard

You'll also need

Pepper, Salt, Vegetable oil (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Preheat the oven to 200°C/ 180°C (fan)/ 425°F/ Gas 7

Boil a kettle 

Dissolve the chicken stock cube[s] in 150ml [300ml] boiled water

Whisk the Dijon mustardcream cheese and cornflour with the chicken stock until smooth - this is your cooking sauce

Add the kale, diced chicken and cooking sauce to a wide oven-proof dish and season with a pinch of salt and pepper 

Give everything a good old mix up and set aside

Tip: use individual pie dishes for fancy presentation

Grate the cheddar cheese 

Grate the potatoes (skins on)

Squeeze any excess water out of the grated potatoes 

Tip: wrap the grated potatoes in a clean tea towel and twist the cloth to remove as much water as possible

Mix the grated potatoes and cheddar cheese with a generous pinch of salt and a large drizzle of vegetable oil

Top the chicken and kale mixture with the grated potatoes 

Put the tray in the oven for 45-50 min or until golden and crispy and the chicken is cooked through– this is your potato-topped chicken, mustard & kale pie

Once done, remove the tray from the oven and leave the pie to cool slightly for a few min 

Serve the potato-topped chicken, mustard & kale pie
