Easy Meat-Free Mince Biryani (V)
Biryani is the paella of Indian food. Traditionally, it's baked in a clay pot for hours, but our easy twist with meat-free mince is ready in less than thirty minutes.

Instructions for 2 [for 4] portion recipe.
Peel and dice the brown onion[s]

Heat a large, wide-based pan (preferably non-stick with a matching lid) with 1-2 tbsp vegetable oil over a high heat
Once hot, add the diced onion, garam masala and a pinch of salt and pepper
Cook for 2 min or until starting to soften

Meanwhile, trim, then chop the green beans in half

Add the meat-free mince to the pan and cook for 3-4 min, breaking it up with a wooden spoon as you go
Sprinkle the vegetable stock mix into the pan and add the tomato paste

Cook for a further 2 min or until the meat-free mince is starting to brown
Stir in the basmati rice

Add 300ml [600ml] cold water to the pan and bring to the boil over a high heat
Add the halved green beans and sultanas
Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until the water has absorbed and the rice is cooked
Tip: Add a splash of water if the rice is not fully cooked or the mixture is looking a little dry

Once cooked, fluff the rice with a fork
Taste for seasoning, adding more salt and pepper if needed – this is your meat-free mince biryani

Serve the meat-free mince biryani with a dollop of natural yoghurt on top
